Ingredients
  

  • For the Sweet Potatoes:
  • 2 sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1½ tsp paprika
  • 1 tsp garlic powder
  • For the Beef & Veggies:
  • 1 red pepper, sliced
  • ½ white onion, sliced
  • 1 can black beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ¼ cup diced canned tomatoes
  • ¼ cup beef or vegetable stock
  • ½ cup mozzarella cheese

Instructions
 

  • Preheat oven to 425°F.
  • Peel and cube the sweet potatoes. Toss them with 2 tbsp olive oil, 1 tsp salt, 1½ tsp paprika, and 1 tsp garlic powder until evenly coated.

  • Spread the sweet potato cubes in a single layer on a baking sheet. Roast for 25 minutes or until golden and tender.

  • In a large pan, heat 1 tbsp olive oil over medium-high heat. Add the sliced red pepper and onion, sauté for 3–4 minutes until softened and slightly golden.
  • Add the black beans to the pan and stir briefly to combine with the vegetables.

  • Add the ground beef to the pan and cook until browned, crumbled, and the thickest crumbles reach 160°F / 71°C. Stir in 1 tsp chili powder, 1 tsp garlic powder, 1 tsp smoked paprika, and 1 tsp salt.

  • Pour in the diced tomatoes and beef or vegetable stock. Simmer the mixture for 5 minutes to develop deeper flavor.

  • Stir in ½ cup shredded mozzarella cheese until it melts and blends into the beef mixture.

  • Assemble the taco bowls by placing the roasted sweet potatoes at the bottom, followed by the beef and veggie mixture. Garnish and serve.

Notes

For a vegetarian version, substitute the ground beef with a plant-based alternative.
Use any vegetable stock if avoiding beef stock.
Add toppings like avocado, cilantro, or lime for extra flavor and freshness.
